What apple cider vinegar is?

Apple cider vinegar apart from acetic acid and malic acid also contains: gallic acid, coffee acid, chlorogenic acid and valuable antioxidants from the group of polyphenols - catechins. It comprises small amounts of vitamins and minerals. This maximizes the absorption of important minerals contained in food.
The best form of apple cider vinegar is unpasteurized, unfiltered and unheated, with the “mother”– with a natural suspension. How to get it? For sure it will be difficult to find such “living” apple cider vinegar. Thus, I recommend making it on your own, which guarantees that vinegar will not undergo any unnecessary processes changing it into a worthless product. The manner of vinegar preparation is simple because most of the works will be conducted by the nature itself. Our work refers to selecting best apples and grinding them. For apple cider vinegar “winter” apples are the best as they contain the biggest volumes of sugars. Apples shall come from a proven source, favourably from local farmer and shall be ecological and unsprayed.

It is trivially easy to prepare:

1. Remove seed cores from apples leaving the skin. We cut and crush washed apples, e.g. using the food press for potatoes (we push apple parts through the food press), or using the meat mallet (we put apple parts into a strong foil bag and crush them).
2. Insert crushed apples into a big jar (for 2/3 of its volume) and pour over with water.
3. Secure the jar with gauze and leave it in a non-sunlight, warm (16-26C) place for 3-4 weeks.
4. We may leave the rest of the works to the nature:)

Already after several days the process of fermentation will start during which sugars will be converted into alcohol. During the subsequent fermentation, this time acidification, alcohol will be converted into acids: acetic and malic acids. Both processes are conducted with the participation of bacteria. In that phase, you may stir the mixture once a day. When we notice that no reaction is taking place in the jar (there are no bubbles) and the mixture has a vinegary smell and a sour taste – it means that your vinegar is ready! No it is sufficient to strain and pour it into bottles. It shall not be pasteurized. Remark! Put aside bottles with vinegar will become clear after some time with the sediment at the bottom. The sediment is very valuable and you should not remove it, just shake the bottle before use.

Reasons for which it is good to use apple cider vinegar:

1. enhances digestion in a natural manner. It is sufficient to drink a spoonful of vinegar with a glass of water 15 minutes before the meal in order to increase the secretion of digestive juices.

6. strengthens the immune system. Drinking apple cider vinegar with water on every day basis improves conditions for the development of useful intestinal bacteria, which has a positive effect on the general immunity of the organism.
7. has a positive influence on the lymphatic system, helps cleanse lymph nodes.
8. alleviates allergies. It is useful in sinusitis therapy and colds symptoms reduction. When regularly used, it decreases mucous production, as well as oedemas of the mucous membranes.
9. regulates the level of sugar in the blood, which makes it useful in case of diabetes. Apple cider vinegar, thanks to the content of acidic acid slows down carbohydrates digestion, thanks to which it protects against quick rises of the blood sugar level. It has been proved in numerous studies that apple cider vinegar increases insulin sensitivity in persons with diabetes type 2.

14. combats bad breath. Thanks to antibacterial properties the mouth rinse with apple cider vinegar helps combat bad breath. Dissolve a spoonful of apple cider vinegar in a glass of water and rinse your mouth for 20 seconds.
15. combats acne and skin problems such as psoriasis and eczema. Used both externally and internally it helps balance skin pH value. A perfect agent to treat dermatological problems.
16. prevents cramps. Apple cider vinegar increases the level of potassium, the deficiency of which causes leg cramps and legs heaviness.
17. increases strength and gives energy. Although better strength and energy, which we get drinking apple cider vinegar with water, are difficult to be measured, however its consumption has so many advantageous effects on the body that it is considered to be a highly health promoting product. Although it is acid beyond the body (similarly as lemon juice), it is well known for its alkalizing effects.
